Lemon Garlic Roasted Chicken with Herbs



Ingredients:

- 1 whole chicken (about 4-5 pounds)

- 4 cloves garlic, minced

- Zest of 1 lemon

- Juice of 1 lemon

- 2 tablespoons olive oil

- 2 teaspoons dried thyme

- 2 teaspoons dried rosemary

- 1 teaspoon dried oregano

- Salt and pepper, to taste

- Fresh herbs (such as thyme, rosemary, and parsley) for garnish


Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a small bowl, mix together the minced garlic, lemon zest, lemon juice, olive oil, dried thyme, dried rosemary, and dried oregano to make the marinade.

3. Pat the chicken dry with paper towels and place it in a roasting pan or baking dish.

4. Rub the marinade all over the chicken, making sure to coat it evenly.

5. Season the chicken generously with salt and pepper, both inside and out.

6. Place the chicken breast-side up in the roasting pan and tie the legs together with kitchen twine, if desired.

7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.

8. Once the chicken is cooked through and golden brown, remove it from the oven and let it rest for about 10 minutes before carving.

9. Garnish the chicken with fresh herbs, such as thyme, rosemary, and parsley, before serving.
